Ingredients: Spiced carrot and lentil soup


– 1 tablespoon olive oil

– 1 onion, chopped

– 2 cloves garlic, minced

– 1 teaspoon ground cumin

– 1 teaspoon ground coriander

– 1/2 teaspoon ground turmeric

– 1/4 teaspoon cayenne pepper (adjust to taste)

– 1 cup dried red lentils, rinsed and drained

– 4 large carrots, peeled and chopped

– 1 sweet potato, peeled and chopped

– 6 cups vegetable broth

– Salt and pepper to taste

– Juice of 1 lemon

– Fresh cilantro, chopped (for garnish)


Instructions: Spiced carrot and lentil soup


  1. Heat olive oil in a large pot over medium heat. Add chopped onions and cook until they become translucent.


  1. Add minced garlic and cook for another 1-2 minutes until fragrant.


  1. Stir in ground cumin, ground coriander, ground turmeric, and cayenne pepper. Cook for a minute to toast the spices.


  1. Add chopped carrots, sweet potato, and rinsed lentils to the pot. Stir well to coat the vegetables and lentils with the spices.


  1. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for about 20-25 minutes or until the lentils and vegetables are tender.


  1. Use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a blender and blend until smooth.


  1. Season the soup with salt, pepper, and lemon juice to taste. Adjust the spices if needed.


  1. Serve the spiced carrot and lentil soup hot, garnished with fresh cilantro.
