Carolina Reaper Hot Sauce

  • Ingredients:
  • 10 Carolina Reaper peppers, stemmed
  • 5 garlic cloves
  • 1 cup distilled white vinegar
  • 1 teaspoon salt
  • 1 tablespoon sugar

  1. Wear gloves when handling the peppers. In a small pot, combine the peppers, garlic, vinegar, salt, and sugar.


  1. Bring the mixture to a boil and reduce heat to low. Simmer for about 20 minutes, or until the peppers are very soft.


  1. Carefully transfer the mixture to a blender and blend until smooth.


  1. Strain through a fine-mesh sieve, pressing the solids with a spoon to extract as much liquid as possible.


  1. Let the sauce cool, then funnel it into a clean glass bottle with a tight-fitting lid. Store in the fridge.

Carolina Reaper Jerk Chicken

  • Ingredients:
  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon brown sugar
  • 1 tablespoon allspice
  • 1 tablespoon thyme
  • 2 scallions, chopped
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 piece fresh ginger, peeled and grated
  • 1-2 Carolina Reaper peppers, stemmed and minced
  • Juice of 1 lime


  • Instructions:
  1. In a blender or food processor, combine the soy sauce, olive oil, brown sugar, allspice, thyme, scallions, onion, garlic, ginger, Carolina Reapers, and lime juice. Blend into a smooth paste.


  1. Score the chicken thighs and place in a large bowl. Rub the jerk seasoning all over the chicken, making sure to get it into the cuts.


  1. Cover and refrigerate for at least 1 hour, or up to 24 hours.


  1. Preheat your grill to medium-high heat. Place the chicken on the grill, skin-side down, and cook for 6-7 minutes. Flip the chicken and continue cooking until the internal temperature reaches 165°F (75°C), about 10-12 minutes longer.


  1. Rest for a few minutes, then serve with your favorite side dishes.

Reaper Salsa Fresca

  • Ingredients:
  • 4 ripe tomatoes, diced
  • 1/2 white onion, minced
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lime
  • Salt to taste
  • 1 Carolina Reaper pepper, stemmed and minced


  • Instructions:
  1. Combine all the ingredients in a bowl and mix well.


  1. Adjust the salt to taste and let the flavors meld for at least 10 minutes.


This salsa is perfect for tacos, nachos, or as a dip for tortilla chips. But beware, it’s not for the weak of the tongue.
