Here’s a basic recipe for making Mulligatawny soup:

 

Ingredients:

 

– 1 cup red lentils, rinsed and drained

– 1 cup boneless, skinless chicken breasts, diced (optional)

– 2 tablespoons vegetable oil or ghee

– 1 large onion, finely chopped

– 2 carrots, diced

– 2 celery stalks, diced

– 1 bell pepper, diced

– 3 cloves garlic, minced

– 1 tablespoon ginger, grated

– 1 teaspoon curry powder

– 1 teaspoon ground cumin

– 1 teaspoon ground coriander

– 1/2 teaspoon turmeric

– 1/4 teaspoon cayenne pepper (adjust to taste)

– 1 can (14 oz) diced tomatoes

– 6 cups chicken or vegetable broth

– 1 cup coconut milk

– Salt and pepper to taste

– Fresh cilantro for garnish

– Lemon wedges for serving

 

Instructions:

 

  1. Prepare Ingredients:

   – Rinse the lentils under cold water and set them aside.

   – If using chicken, dice it into small pieces.

 

  1. Sauté Aromatics:

   – In a large pot, heat the vegetable oil or ghee over medium heat.

   – Add the chopped onion, carrots, celery, and bell pepper. Sauté until the vegetables are softened.

 

  1. Add Spices:

   – Add minced garlic and grated ginger to the pot. Sauté for another minute until fragrant.

   – Add curry powder, ground cumin, ground coriander, turmeric, and cayenne pepper. Stir well to coat the vegetables in the spices.

 

  1. Add Lentils and Liquid:

   – Add the rinsed lentils to the pot and stir.

   – Pour in the diced tomatoes with their juice and the chicken or vegetable broth.

   – If using chicken, add the diced chicken to the pot.

 

  1. Simmer:

   – Bring the soup to a boil, then reduce the heat to low and let it simmer for about 20-25 minutes or until the lentils and chicken (if used) are cooked through.

 

  1. Add Coconut Milk:

   – Pour in the coconut milk and stir to combine. Simmer for an additional 5 minutes.

 

  1. Season and Garnish:

   – Season the soup with salt and pepper to taste.

   – Garnish with fresh cilantro.

 

  1. Serve:

   – Ladle the Mulligatawny soup into bowls and serve with lemon wedges on the side.
