– 2 celery stalks, diced

– 1 bell pepper, diced

– 3 cloves garlic, minced

– 1 teaspoon ground cumin

– 1 teaspoon ground coriander

– 1/2 teaspoon turmeric

– 1/4 teaspoon cayenne pepper (adjust to taste)

– 1 can (14 oz) diced tomatoes

– 6 cups chicken or vegetable broth

– 1 cup coconut milk

– Salt and pepper to taste

– Fresh cilantro for garnish

– Lemon wedges for serving

 

Instructions:

 

  1. Prepare Ingredients:

   – Rinse the lentils under cold water and set them aside.

   – If using chicken, dice it into small pieces.

 

  1. Sauté Aromatics:

   – In a large pot, heat the vegetable oil or ghee over medium heat.

   – Add the chopped onion, carrots, celery, and bell pepper. Sauté until the vegetables are softened.

 

  1. Add Spices:

   – Add minced garlic and grated ginger to the pot. Sauté for another minute until fragrant.
