Ingredients of zorba chicken
- 4 chicken breasts, cut into pieces
- 1/2 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon dried coriander
- Juice of 1 lime
- 1 cup hummus
- 1/2 cup plain yogurt
- 4 whole wheat pitas
- 1 large tomato, diced
- 1 red bell pepper, thinly sliced
- 2 cups mixed greens
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions for zorba chicken
- In a large bowl, coat the chicken pieces with turmeric, cumin, coriander, and lime juice. Let the marinated chicken sit for at least 30 minutes, or preferably overnight in the fridge.
- Heat a skillet over medium-high heat. Cook the chicken until browned and cooked through, about 5-6 minutes per side. Once cooked, remove the chicken from the skillet and set it aside.
- In a small bowl, mix the hummus and yogurt until smooth. This will be your hummus mixture.
- In another bowl, whisk together the olive oil, vinegar, minced garlic, salt, and pepper to create the salad dressing. Toss the mixed greens, tomatoes, and bell peppers with the dressing.
- To assemble the pitas, warm them slightly in a toaster or on the stove to make them pliable. Cut each pita in half. Spread the hummus mixture inside each half.
- Fill each pita half with the grilled chicken pieces and the tangy salad.
