1. Heat a dry skillet over medium heat.
2. Add the coriander seeds, cumin seeds, black peppercorns, cardamom pods, cloves, cinnamon sticks, and fennel seeds to the skillet.
3. Toast the spices for about 2-3 minutes, stirring constantly, until they become fragrant. Be careful not to burn them.
4. Remove the skillet from the heat and let the spices cool completely.
5. Once cooled, transfer the spices to a spice grinder or a mortar and pestle.
