Carolina Reaper Hot Sauce

- 1 cup distilled white vinegar
- 1 teaspoon salt
- 1 tablespoon sugar

- Wear gloves when handling the peppers. In a small pot, combine the peppers, garlic, vinegar, salt, and sugar.
- Bring the mixture to a boil and reduce heat to low. Simmer for about 20 minutes, or until the peppers are very soft.
- Carefully transfer the mixture to a blender and blend until smooth.
- Strain through a fine-mesh sieve, pressing the solids with a spoon to extract as much liquid as possible.
- Let the sauce cool, then funnel it into a clean glass bottle with a tight-fitting lid. Store in the fridge.

Carolina Reaper Jerk Chicken
- Ingredients:
- 4 chicken thighs, bone-in and skin-on
- 2 tablespoons soy sauce
- 2 tablespoons olive oil
- 1 tablespoon brown sugar
- 1 tablespoon allspice
- 1 tablespoon thyme
- 2 scallions, chopped
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 piece fresh ginger, peeled and grated
- 1-2 Carolina Reaper peppers, stemmed and minced
- Juice of 1 lime
- Instructions:
- In a blender or food processor, combine the soy sauce, olive oil, brown sugar, allspice, thyme, scallions, onion, garlic, ginger, Carolina Reapers, and lime juice. Blend into a smooth paste.
- Score the chicken thighs and place in a large bowl. Rub the jerk seasoning all over the chicken, making sure to get it into the cuts.
- Cover and refrigerate for at least 1 hour, or up to 24 hours.
- Preheat your grill to medium-high heat. Place the chicken on the grill, skin-side down, and cook for 6-7 minutes. Flip the chicken and continue cooking until the internal temperature reaches 165°F (75°C), about 10-12 minutes longer.
